OC Healthy Recipe: Peanut Butter Power Bites

This week we have another recipe for you as Tiffany shows us how to make peanut butter power bites.

Once again, the beauty of this recipe is it is versatile and you can add and remove ingredients as you see fit.

Peanut Butter Power Bites

1 ¾ cups of oats (old fashioned or quick cooking variety)

1/4 cup of seeds (chia seeds and ground flax seed used here)

3/4 cup of peanut butter (natural peanut butter is preferred)

1/3 cup of honey (local honey from Ohio County is available)

1/4 cup of shredded coconut (chopped nuts also work)

1 tablespoon of cacao (use sparingly as it can be overpowering)

Directions:

Combine all ingredients in a mixing bowl and stir thoroughly.

Once combined, spoon out mixture and roll into 1 to 2½ inch balls and place on a cookie sheet.

Store in freezer for 1 to 2 hours before transferring power bites to plastic bags or other containers.
